‘Cado, pineapple and ‘mato salad

Last night, I mentioned that, I was still searching for a suitable side to go with my Kumara curry and salmon hash browns…after five years, can you believe it? I’ve been getting by with rocket salads but I kinda hate rocket…if I’m absolutely honest about it…

So, on Wednesday afternoon, I sat down with a lot of coffee and considered the problem. What textures and flavours would complement but not compete with the textures and flavours of the hash browns and salmon. There is just a hint of curry in the hashes, mixed with the salt of the salmon and smooth cheesiness of the sour cream that holds the stack together. Overall it’s quite sweet and smooth.

It all came together quickly after I thought of an avocado base….smooth and sweet…with pineapple, sweet with a fibrous texture…with diced tomato…more tart and something else to bite into. Originally I was going to warm this mix in the microwave – it is winter after all – but opted for a natural heat from a sauce derived from the fried avocado tacos at The Guardian by blending all these together:

1 cup of sour cream

2 small chillies

2 gloves of garlic

1 tablespoon of lime juice

1 bunch of coriander

a smidgen of salt and pepper

The black rice was an afterthought left over from the previous night’s beets, feta and rice…I wasn’t really sure what to do with it otherwise but it worked well in our salad.

The first night I only used a teaspoon-sized dollop of the sauce on the salad – wasn’t enough to appreciate all the flavours. I had one hash stack left over plus about a cup and a half of the salad and other stuff in the fridge from a  week of cooking that I needed to consume to free up fridge space.

So this is Take Two: one curry kumara salmon stack reheated in the microwave (it was already cooked: normally, I would keep the hash mix uncooked), with a goodly amount of greek yogurt on top, with the salad accompanied by a decent-sized dollop of the coriander and chili sauce, topped with feta from the beets and rice dinner…

Mmmm…primo!!!! A great blend of flavours and textures, with bonus points for good use of left-overs…less points for unused salmon which I just remembered is still sitting in the fridge…

…so tomorrow’s challenge may involve smoked salmon, streaky bacon, feta, sour cream, greek yoghurt, a tomato and an avocado. The rest of the pineapple – all fresh here no canned stuff – is destined for smoothies with banana, chia seed, coconut milk and tumeric…

If we were having coffee, I’d tell you how great it has been having people to cook for the last week. Breakfast and lunch are pretty much self-help here but our dinner menu was pretty on to it:

Day One: Roast Baby Armadillo on a potato, kumara, parsnip mash. This is quick and easy. I only made half the recipe but added the full cup of milk to the bread which made it a bit gooey. I fixed this with a half cup of almond coconut meal (left over from almond coconut milk) which a. worked to soak up the extra milk and b. added an interesting flavour and texture twist to the meat loaf.

Day Two: South African Curry with brown rice. This can be made with meat or not but I had 500 grams of mice left over from the baby armadillo and, due to my currently congested fridge space, this was a good way of consuming it.

Day Three: Fruit Salad Curry with brown rice.

Day FourChicken and Potato Chowder. My plan was to have this with homemade bread but I got a bit careless and put into too much water. The result was a bread with a heart so hard it burst out of the when I tipped up the breadmaker bowl.

Day Five: Beets and Goat Feta on Black Rice. This was the first time I’ve made this with raw beets. These worked as well as if not better than the precooked one I snagged form the supermarket last time by accident.I did go over on the olive oil and had to up the honey and balsamic to compensate…it all worke don the day though..

Day Six: Curry Kumara Hash Browns with Salmon and a neat salad. These hash browns are really nice but I’ve never been able to find a decent side to go with them. In the past I have relied on a dodgy rocket salad but I’m not really a big rocket person. Last night I tried a bit of an experimental salad and sauce that worked really – both of them…more to follow on that soon…

If we were having coffee, I’d tell you how impressed I was when the train arrived 15 minutes early on Friday…but then it was almost 15 minutes late this afternoon – life balances out but the lesson is to wait in the cafe with your coffee and the crispy fire until it actually pulls up…

If we were having coffee, I’d tell you I’m humbled to have gained a seat on the National Park Community Board. Elections aren’t until October but the position wasn’t contested so it’s done and dusted. I’ve probably just signed myself for even more work but I’ve got some catching up to do getting into this community. I’ve lived up here since 2004 but it’s only been since I started to work in the Park that I’ve started to get involved…yes, I do miss the Defence travel sometimes but it doesn’t outweigh coming home each night…

If we were having coffee, I’d be telling you how excited I am to be getting into some new ventures in the Park…

My green journey started when Bubble asked me if I had seen Cowspiracy…seen it? I had only vaguely heard of it…but in the spirit of learning and breaking down preconceptions (of which, I may or may not have a few), I tracked down a copy, put my feet up one night with a cold root beer and watched…

…but this guy really just didn’t do it for me…nor did his story…

Cowspiracy presents like a ‘real crime’ expose…but the producer is so sure that everything is part of some great but unstated conspiracy but all his smoking guns are wet bus tickets. I think the point is is trying to make – bit never does – is that any sort of dairy farming is unsustainable.

That may or may not be true but his logic never gets to the point and the narrative wonders from one conspiratorial form of commercial agriculture to the next. He accuses Greenpeace and other organisations of being complicit in the conspiracy and then wonders why they don’t want to speak to him – which he then presents as further evidence of the conspiracy.

From my own research I get that feeding cattle wheat-based products has an effect on the environment. I get that this may lead to a profit-motivated clearing of forest for cropland. I get that extensive marketing drives over-consumption of meat products. But Cowspiracy didn’t tell me that. The only things I got from Cowspiracy was the clever title and an unpleasant sensation that ‘antis‘ like the producer of Cowspiracy do more harm than good to their cause and that crossing the road to avoid them is probably a good idea…

But I’m glad that Bubble recommended that I watch it. It made me think and so my own research and develop my own opinion. I love a good steak, dripping with garlic; I love my homemade burgers and nothing beats a good roast on a winter weekend. But, like most things, in moderation. the thing that really discouraged me from commercial meat products was the Hot Doc’s comments about the amount of hormones and other additives in the commercial food chain. So now, I aim for free range or organic chicken and when I do buy meat, it is an unprocessed as possible, no marinades, crumbing, etc…

So good things come from pseudo X-Files exposes like Cowspiracy…and from Cowspiracy, Bubble led me on to That Sugar Movie which is well-produced, logical and inspired me to think about me and sugar…

Eat when hungry

Absolutely!! I take two big smoothies to work with me each and work on these through the day; at home I keep a big bowl of fruit for snack attacks…

Choose water over any other beverage

This goes hand in hand with ‘eat when hungry’…often a good slurp of good water, maybe with some infused raw fruit and/or herbs or spices is as good as something to eat. Taking a good slurp is still hard after many years conserving each and every sip of water that we had to carry but I’m working on it…

Let veges play the lead role

What is the key noun in your recipe title? If it’s a vegetable, or to a lesser degree, a fruit (fruity recipes are often desserts and so carry more temptative risk) then you are probably on the right track: I’m not anti-meat…you just don’t need it for a good meal…still a nice treat..

I’d just socked up on veges when the big fridge decided to time out and so I have had to focus on consuming a lot of my reserve stock as the big freezer is maxed out with the contents of the fridge’s freezer. To dispose of a pumpkin, I pureed the flesh, cleaned and dried the seeds for other projects, and fed the roasted skins to the Cujos…I’ve been using the puree in a range of dishes to reduce the quantity to something that will fit int he freezer…yes, I have been making the pumpkin and oatmeal muffins again, and will try pumpkin porridge in the morning. A particular success has been pumpkin chai latte (i’ll write the recipe up in a couple of days): no dairy, and only a half teaspoon of honey for sweetening…veges lead…

Choose foods closest to their natural form

Eliminate the middle man. As much as possible work with the original raw material, avoid as many processing stages as you can, like, before it gets to you…be the master of your food’s destiny…it doesn’t take a big investment in money or time to be able to make yourself many of the items you buy prepackaged from the supermarket…almond and coconut milk would be one of the easiest and cheapest…DSCF0271.JPG…a bread maker will pay for itself in less than a year as well as giving you the flexibility of making what you want when you want it…buy the raw materials and see where the journey takes you…why buy a lemon/ginger/honey mix for winter coughs and colds when you can make a better one yourself…?

Portion Control

Lots of little, not just a few big is the way to think. In 1999, I was attached to a Malay Ranger unit near KL…the Officers Mess routine was six meals a day and some of the other Kiwis struggled with this. Many Asian countries work on this more little meal idea and it works really well…goes hand in hand with the concept of eat when hungry…in addition, these meals spaced through the day and into the evening were when the CO interacted with his officers: you had to be there anyway…lots of little…

Eat Healthy-ish

Ish, exactly…no regimented counting points or grams of sugar or mls of water consumed…eat within your own healthy guidelines…and enjoy falling off the wagon every once in a while – you’re allowed a break day, just not every day…for me, these are working:

Reduce or avoid whites…white bread, white flour, white sugar, white salt, etc…white ingredients generally have a the good stuff beaten out of them already…

Reduce dairy…even though I can make dairy-free cheese which is good for on toast and pizzas etc, I still love real cheese in my chicken soup and it is still the best complement to cauliflower and broccoli on a chilly winter night…but…the only milk in the house in in small bottle in the freezer for those guests who prefer cow instead of a non-dairy alternative…so far, I have been able to use my homemade almond coconut milk as a successful substitute for dairy milk in baking and brews – it froths up well with a half teaspoon of protein powder added to it…

If you could have an endless supply of any food, what would you get?

Coconuts. They don’t grow here so it’s not like I can grow my own and they are still pretty pricey at the supermarket but with a guaranteed supply, I’d be making all my own coconut oil, flour, milk etc even more than I am now…of course, in a few months I’d be over it and want an endless supply of something else…

What is the worst thing you ate this last recently?

Tough question as I eat pretty well, if I do say so myself…I’ve been working to perfect a good (great would be awesome but I’ll settle for good) dairy-free latte. Non-dairy milks won’t ‘pull’ the same way as real milk…this is due to to a lack of protein so adding a half- teaspoon or so of protein powder lets coconut or almond milk froth up nicely using a mechanical frother. Last week, during the trial phase, I made an error in assuming the frother would also serve as a mixer for the teaspoon of protein powder in the bottom of the cup. It didn’t and my coffee was spoiled by a sand-like grit (it was pea protein not dairy) in the dregs  – normally the best bit where the final swirls of coffee and coconut combine…

Are you are comfortable doing nothing? For long stretches of time?

Yes…years of practice…something called ‘hurry up and wait’…it’s easy to zen into a ‘park’ mode, still aware of what goes on but conserving effort and energy ’til whatever happens/arrives/departs/whatever…

Last week, I’m grateful I finally took the plunge and applied for the next Pre-Hospital Emergency Care course. I’ve been avoiding getting back into this game for a while but the more I get drawn into the Park and the District, old flames rekindle. I enjoyed the debate during the Outdoor First Aid course last year and much as I’ve tried to steer away, I think now why not..? So a lot of study to get my head back in this…

I’m also grateful that I took the plunge to run for the National Park Community Board. Again, as a result of being drawn more and more into the District, I’m looking for ways to engage and contribute. Earlier this year I joined the Village Business Association and the Community Board seems like a logical next step…

Next week…I’m looking forward to my parent’s coming to visit for a week…the first time they’ve bee up here in quite some time…been a few changes to this place…DSCF9706.JPG

Also looking forward to some good outcomes from a tactical planning meeting with my lawyers on Monday…one way or another, the battle with the bank hasn’t got long to run…how it will go I don’t know but the new evidence we uncovered in the last week or so looks promising…

I saw this topic pop up in the morning mail and thought it would be a quick and easy post…

The Muses/ˈmjzz/ (Ancient Greek: Μοῦσαι, Moũsai; perhaps from the Proto-Indo-European root *men- “think”) in Greek mythology are the inspirational goddesses of literature, science, and the arts. They were considered the source of the knowledge embodied in the poetry, lyric songs, and myths that were related orally for centuries in these ancient cultures…In current English usage, “muse” can refer in general to a person who inspires an artist, writer, or musician.

I did a spot of googling, mainly in search of an image to fit my perception of ‘muse’ and to lesser degree, see what others might be thinking. At first I thought this quote was pretty apt:

What was wrong with this picture and many of the other memes, notes and articles that I found is that they all portray a muse as a dark thing, the bringer or the result of pain and tragedy. And that’s just wrong…

Yes, I am still riding my wave of Beatles nostalgia after watching Across the Universe last weekend…such great, so very clever words…if you haven’t seen Across the Universe, it is really worth the watch…if you like The Beatles…if you like the grassroots groundswell of change that swept the late 60s…if you just likely a feel good story put to great music…original takes on classic tunes…

It’s sad that so many people think that tragedy and pain is the only inspiration…my muse inspires through happiness and light…a mischief smile…a twinkling eye…examples well-set…

Annika - SH47 Erua 22 Jul 16 2Even just relistening to all these tunes while drafting this post rekindles those memories and I’m writing again…the world might be a dark and scary place, there may be many things happening that we don’t like or that may frighten us but we shouldn’t be looking to the darkness for our inspiration: nothing good lies there…we should look to the light, look what’s good and let that inspire us…

Going bananas

A couple of weeks ago, I journeyed down to Palmerston North for a meeting with a local MP. I had a few errands to run before heading north again, one of which took me to Spotlight for some voile to make my own nut milk bag. The Spotlight shares a car park with New World so I popped in there in search of some of this:

The Stir It Up line of non-dairy milk powders (almond, coconut, oat and soy) was launched a few weeks prior but had been slow to appear on shelves. My previous supply of coconut milk powder having dried up, I’ve been keen to give it a go.

Anyways, New World had nice big juicy oranges for 99 cents/kg so I mega stocked up; looking back I should have bought twice as much for juicing and freezing. The trouble with juicing oranges is having to peel them all so, being inherently lazy, I googled a solution…which said…peel the oranges…

My quest did lead me to a site – now forgotten –  that listed fruit that could be juiced unpeeled – the short version is most of them less citrus – and extolled the virtues of unpeeled banana…it seems that the lowly banana peel is rich in serotonin which helps keep the demons away of grey winter days…so…

…remember to take the sticker off – it’s not rich in serotonin – and give the banana a good wash to remove anything unhealthy…hack the ends off and dice the rest up peel and all…

…slice off and dice up a centimetre ring of pineapple…

before tossing in a tablespoon of chia seeds – don’t put these in first or they will just glug up at the bottom of the mug – a teaspoon of turmeric (organic from Hardy’s), and four teaspoons of coconut milk powder: this is about the same as a cup of coconut milk. Add filtered water up to the mark, blend, fill to the top with water and blend again.

And that’s half of tomorrow’s lunch done…

I’ve been blending unpeeled bananas for a week or so now with no detrimental side effects…I wouldn’t say that there’s been a big surge of serotonin-based benefits either but it does reduce waste and I am now keen for another crack at banana peel cake, using the kumara cake base from a few weeks ago…

Do you prefer a bath or shower?
Generally a shower because showers are quick and I am always in a hurry; also because it has been a long time since I actually had access to a working bath…I’d like to replace the bathroom external wall with a double-glazed slider or bifold, tile the interior and be able to lie in the bath (the same bath that has been sitting in the garage since the end of 2009) and gaze out into the native bush. Somewhere, I’d also like to spot a couple of external baths, preferably with solar heating, actually out in the bush for even more chilled chllin’…

If you had an unlimited shopping spree at only one store, which one would you choose? Why?
ITM. I would stock up on unlimited building supplies and tools so that I can start and ultimately finish all the projects I want to do here: bathroom, kitchen, post and rail fencing down the driveway, around the boundary, and around the Lodge and the cottage, decks from the front door, dining area and bath room, and retaining walls against the banks. The only resource that I would need that would not be available from ITM would be time.

Love Actually. I don’t like all the plot lines in this but some I do and, combining a neat sound track with happy endings, this is my – for now – bestest feel good movie…

Brainstorm. I’m not sure why – this movie is set, in the real world, against the tragedy of Natalie Wood;s untimley death…the story itself is vaguely technobabbly…but it always leaves me with a good buzz…

The Quiet Man. A babe, a brawl and a bully. A John Wayne classic set in an Ireland of along ago…

John Carter. An epic that flows and that works – for me anyway – totally unchallenging, I can just let it flow over me…

Remember the Titans. I just like it…greta story…great soundtrack…

DSCF0329I am actually grateful for the big fridge deciding to pop a fuse. I put the back-up fridge – it would be THE beer fridge if I ever got round to putting beer in it – in the kitchen as an interim measure…while I miss the capacity of the big Bosch – possibly because I have to think a little bit harder about what goes where – I really like the more open appearance of and access to the kitchen area…

Even though the plough and grit trucks are out, temperatuires are still below zero in most places…with the ski fields and ski field roads being closed, I’d really suggest people want to stay off the roads unless they really need to be somewhere…
